This strange and weird natural phenomenon also known as watermelon “starring”, is created by lack of viable pollen and bad weather conditions during pollination.
In other words, if, during fruit set, so approximately end of April, you have cold cloudy weather, no bees working or any adverse environmental conditions, the developed fruit can display starring.
But as bizarre as they look, the flesh is still edible.
