Do you know what’s the purpose of binding and blinding them like this? I sincerely hope that this is more than just some twisted way to kill the animals.

The explanation is rather cruel, as you might imagine. Most of the meat is harvested onboard, some of the turtles are selected to be kept alive for later, sold for more in “fresh” markets. Blinding their eyes and binding the head to the shell effectively paralyzes the turtles, so they can’t get away.
